Clos de Pavée 2022 by Pierre Borel is a Bourgueil AOC red wine, made from Cabernet Franc grapes grown organically on the gravelly terraces of the vineyard. Vinification is spontaneous, with natural fermentation, followed by aging in neutral barrels, without filtration or extensive fining, and with minimal added sulfites. This wine offers typical aromas of small red and black fruits—blackcurrant, cherry—as well as vegetal and peppery notes (“capsicum”) characteristic of Loire Cabernet Franc. On the palate, it impresses with its freshness, tension, and fine structure, with fine yet present tannins, delivering an elegant and sincere expression of the Bourgueil terroir.
