This single-vineyard cuvée is an immersion into one of Champagne's most legendary terroirs. The 2017 Aÿ Grand Cru from Bérèche & Fils is a wine of exceptional precision, crafted from a small plot of old Pinot Noir vines located on the sunny, chalky terroir of Aÿ. This Blanc de Noirs (100% Pinot Noir) is vinified in oak barrels, unfiltered, to preserve the fruit's natural energy. An Extra Brut, it highlights the vinous power of Aÿ while maintaining exceptional minerality. On the nose, it expresses intense red fruit aromas, toast, and a touch of smoke. The palate is ample, structured, and profound, carried by a creamy effervescence and a saline finish typical of great chalk soils. A rare champagne, produced in very limited quantities.
