Thibaut and Alizée Tassin embody the new generation of Champagne producers. In 2019, they established their own estate, thanks to an advance on inheritance that allowed them to acquire a hectare in Celles-sur-Ource. They set up their cellar in an old farmhouse in Landreville, which they lovingly restored. In the vineyard, their choices are guided by an absolute respect for life: careful observation of the soil, preservation of native flora, pruning that respects the sap, working without chemicals, and using only organic fertilizers. The organic conversion began in 2021. Today, their young estate covers 3 hectares and produces approximately 14,000 bottles, already praised by critics and enthusiasts alike.
